Godminster and Camp Kerela have partnered up again to create the Ulitmate Cheesy Rarebit Steak Burger! Sounds good right! This indulgent burger is dripping with lashings of Godminster rarebit sauce, a ranch sauce and all topped with a pretzel burger bun.
For the burger
- Small bunch of finely chopped parsley
- 2 tbsp of English mustard powder
- 2 tbsp dried onion powder
- 1 tbsp chopped thyme
- 3 tbsp of tomato ketchup
- 2 tbsp of Worchester sauce
- 10 ‘shakes’ of tabasco sauce
- 2 tbsp of puree garlic
- 500g of best beef steak mince
For the Godminster rarebit sauce
- 2 large tbsp of salted butter
- 5 tbsp plain flour
- 400ml of milk
- 200g Godminster Vintage Organic Cheddar
- 1 tbsp puree garlic
- 1 tbsp Dijon mustard
- 2 egg yolks
For the ranch dressing
- 2 peeled cloves of garlic
- 150g of blue cheese
- 3 x tbsp of white wine vinegar
- 150g best french mayonnaise
- 150g sour cream
- Salt and cracked black pepper to taste
- 10 sprigs of dill
- 3 tbsp finely chopped chives
- Small pinch of dried chilli flakes
To garnish your bun
- Pretzel burger buns (we brush ours with garlic butter and pan-fry them!)
- Crunchy romaine lettuce
- Sliced beef tomato (we lightly roast our slices with a basil herb oil to ramp up the flavor)
- Chunky dill pickles
- Artisan tomato ketchup
- Thin sliced red onion
- Crispy pancetta
Steak burgers –
First, we add the thyme and garlic to a frying pan with a little squeeze of olive oil and lightly fry for a minute.
Then add all of the other ingredients minus the beef (mustard powder, tabasco, Worcester, ketchup, onion powder, salt, pepper, and parsley)
Allow this mix to cool before adding.
Then mix into the beef mince and ensure all the flavorings are evenly distributed.
Before forming your burgers test fry a small amount off and check the seasoning, adding more salt and pepper if required.
Rarebit sauce –
Place the milk in a saucepan, and on a low heat and warm until steaming hot.
In a separate pan, add the butter and garlic and melt.
Stir in a pinch of salt and pepper and flour to make a roux, slowly add milk whisking the whole time.
When all the milk is added you should have a smooth thick, white sauce.
Crumble the cheese into the sauce and whisk until melted.
Then finish with the dijon mustard and egg yolks to finish.
Check the seasoning and allow to cool ready to top your burgers!
Ranch dressing –
The easiest way to make this dressing is in a food processor, and then it only takes a minute!
Add dill, garlic, vinegar and chili flakes to the processor and whizz for 10 seconds.
Then add mayo, sour cream, chopped chives and crumbled blue cheese as well and whizz for a further minute.
Then add the salt, pepper to taste.
Stir in the chives.
Top tips for building your rarebit burger –
We brush the burger bun with some garlic butter and pan fry till golden brown.
Cook off your burger, and before it’s quite cooked as you like it we add a big spoonful of rarebit sauce, pop it in the oven to melt the cheese and ensure extra gooeyness!
And then we add all our favorite toppings and sauces! Things like: Crispy pancetta, slow-roasted tomato, dill pickles, romaine lettuce, finely shaved red onion & ranch dressing!
