Godminster Recipes: Stuffed New Potatoes

Stuffed New Potatoes

Godminster's take on Hassleback potatoes makes the perfect accompaniment to a Sunday roast.  Delicious as a vegetarian side, it also works well with crispy pieces of bacon.

100g Godminster Vintage Organic Cheddar (finely grated)

600g new potatoes

Pinch of sea salt

Vegetable oil

  1. Pre-heat your oven to 190 degrees/gas mark 6
  2. Rinse the potatoes and slice almost the whole way through – take care not to cut through completely
  3. Arrange the potatoes on a baking tray and drizzle with oil
  4. Sprinkle a little salt over the top and bake in the oven for 10 minutes
  5. Turn the potatoes and drizzle some more oil and return to the oven for a further 20 minutes
  6. Turn the potatoes back and sprinkle finely-grated Godminster over the potatoes, making sure the cheddar reaches well into the cuts before returning to the oven for a final 10 minutes before serving
