Potato Rosti Stacks with Cheddar & Bacon

30g melted butter

500g Desiree potato

1 onion

4-5 rashers of bacon

50g Godminster Vintage Organic Cheddar

  1. Preheat the oven to 220°C (425°F/ gas mark 7) and line a baking tray (or two) with parchment paper
  2. Boil the potatoes for 7 minutes or until soft and drain any excess water
  3. Finely chop your onion and then grate your potatoes into a bowl
  4. Stir your melted butter into your potato and onion mix and season with salt and pepper Continue stirring until thoroughly mixed together
  5. Separate rosti mixture into 12 discs and place onto baking trays
  6. Bake for 45 minutes or until golden
  7. Whilst rostis are in their last 10 minutes of cooking, grill your bacon until crispy
  8. Once rostis are cooked, leave to cool for a short while. While they are cooling, you can begin cutting your bacon into small pieces, keeping in mind to cut them so that they will fit in your rosti stack
  9. Once rostis have cooled slightly, separate into ‘tops’ and ‘bottoms.’ Then, take your bottoms and place bacon and cheddar on top
  10. Place your rosti, bacon and cheddar stack under the grill and leave until cheese has melted
  11. Place your tops onto the rest of your rostis and use a toothpick to hold stack together. Serve hot
