
Ingredients
30g melted butter
500g Desiree potato
1 onion
4-5 rashers of bacon
Method
- Preheat the oven to 220°C (425°F/ gas mark 7) and line a baking tray (or two) with parchment paper
- Boil the potatoes for 7 minutes or until soft and drain any excess water
- Finely chop your onion and then grate your potatoes into a bowl
- Stir your melted butter into your potato and onion mix and season with salt and pepper Continue stirring until thoroughly mixed together
- Separate rosti mixture into 12 discs and place onto baking trays
- Bake for 45 minutes or until golden
- Whilst rostis are in their last 10 minutes of cooking, grill your bacon until crispy
- Once rostis are cooked, leave to cool for a short while. While they are cooling, you can begin cutting your bacon into small pieces, keeping in mind to cut them so that they will fit in your rosti stack
- Once rostis have cooled slightly, separate into ‘tops’ and ‘bottoms.’ Then, take your bottoms and place bacon and cheddar on top
- Place your rosti, bacon and cheddar stack under the grill and leave until cheese has melted
- Place your tops onto the rest of your rostis and use a toothpick to hold stack together. Serve hot
