The perfect Autumn warming treat, this simple yet classic dish is one of our favourite home comforts! We like to add some delicious ham for a little extra flavour.
Ingredients
- 1 onion (diced)
- 1 celery stick (chopped)
- 25g butter (plus extra for toastie)
- 2 garlic cloves (peeled and chopped)
- 400g chopped tomatoes
- 750ml vegetable stock
- 1 tbsp ketchup
- 100ml double cream
- 1 tbsp creamed horseradish
- Ground pepper
- 2 slices of white farmhouse bread
- 100g Vintage Organic Cheddar
- 2 slices of thick, roasted ham (optional)
Method
- Melt the butter in a saucepan and cook the onions and celery for 10 minutes until soft
- Add the garlic and cook for an additional 2 minutes
- Pour in the tomatoes, stock, ketchup and pepper with a pinch of salt
- Bring to a simmer and cook for around 20 minutes
- When the soup has almost cooked, prepare your toastie
- Butter the outer edges of both slices of bread
- Flip one slice over and sprinkle your Godminster Vintage Organic Cheddar. You can also add your ham at this point if you wish
- Place the other slice on top (with butter outer edge facing up) and fry in a pan until the cheese is melted and the outside is golden brown
- Pour the horseradish and double cream into the soup and stir on a gentle heat
- Using a hand blender, blend the soup until smooth and then serve
