
A delicious Welsh-inspired dish that works perfectly as a light lunch. Serve with a side of salad and enjoy.

Ingredients:
- Vegetable oil
- 1 cauliflower (trimmed and cut into 2 steaks)
For the rarebit:
- 20g butter
- 20g plain flour
- 100ml milk
- 100g Vintage Organic Cheddar (grated)
- Large pinch of cayenne pepper
- 2 tsp of English mustard
- Large dash of Worcestershire sauce
Method
Method:
- In a large frying pan, heat the oil and then sear the steaks until nicely browned on both sides
- For the rarebit, melt the butter in a saucepan. Once melted add the flour and stir until a paste
- Add the milk a small amount at a time to make a roux (white sauce). Let it simmer for a few minutes, stirring often
- Stir in the cheese, cayenne pepper, mustard and Worcestershire sauce until the cheese has melted and all the ingredients are combined
- Remove from the pan and leave to cool slightly
- Heat the oven to 190C/170 Fan/Gas 5
- Place the steaks on a lined baking tray and evenly spread the rarebit mixture onto them until covered
- Bake in the oven for 12-15 minutes. If necessary, finish under a hot grill to brown off
- Transfer rarebits to a plate and serve with fresh salad
