Godminster Vintage Organic Cheddar Cauliflower Rarebit

A delicious Welsh-inspired dish that works perfectly as a light lunch. Serve with a side of salad and enjoy.



  • Vegetable oil
  • 1 cauliflower (trimmed and cut into 2 steaks)

For the rarebit:


  • In a large frying pan, heat the oil and then sear the steaks until nicely browned on both sides
  • For the rarebit, melt the butter in a saucepan. Once melted add the flour and stir until a paste
  • Add the milk a small amount at a time to make a roux (white sauce). Let it simmer for a few minutes, stirring often
  • Stir in the cheese, cayenne pepper, mustard and Worcestershire sauce until the cheese has melted and all the ingredients are combined
  • Remove from the pan and leave to cool slightly
  • Heat the oven to 190C/170 Fan/Gas 5
  • Place the steaks on a lined baking tray and evenly spread the rarebit mixture onto them until covered
  • Bake in the oven for 12-15 minutes. If necessary, finish under a hot grill to brown off
  • Transfer rarebits to a plate and serve with fresh salad
