Godminster Vintage Organic Cheddar and Ham Pancakes

Makes 4

  • 1 beaten egg
  • 200ml of whole milk
  • Half a teaspoon of salt
  • 100g of plain flour
  • A tablespoon of vegetable oil
  • 1 ½ tablespoons of butter
  • 90g of smoked ham
  • 100g of Vintage Organic Cheddar
  • Combine the egg, milk, salt and flour into a mixing bowl
  • Whisk until it is a smooth batter
  • Swirl a drop of oil on a pan over medium heat
  • Pour ¼ of the batter into the pan, tilt the pan to ensure it coats the entire base
  • Cook for 1 minute, carefully flip the pancake and cook for another 30 seconds
  • Add ¼ of the butter, add the diced ham and coarsely grated Vintage Organic Cheddar
  • Fold the pancake in half and transfer it to your dish
  • To finish, add a drizzle of Seggiano’s Organic Super Dense Chilli Balsamic Glaze – available at the Godminster Shop
