Godminster Three Seed Cheddar Straws

The perfect festive nibbles! Delicious with houmous, Godminster Beetroot & Apple Chutney or simply enjoyed on their own!

  • 375g plain flour
  • 225g butter
  • 150g Godminster Vintage Organic Cheddar plus extra for sprinkling
  • 2 egg yolks
  • Pumpkin seeds, sunflower seeds and linseeds to decorate​

Sift the flour and a pinch of salt into a bowl. Using your fingertips, rub in the butter until all the lumps are gone, creating a breadcrumb like texture.

Add the cheese and stir in the egg yolks, making sure to mix well.

Add 4-5 tablespoons of cold water and mix to a firm dough.

Cover in cling film and chill in the fridge for 30 minutes.

Preheat the oven to 190C/375F/Gas 5 and line a baking sheet with baking parchment.

Roll out the dough to a square and cut the square in half, then repeating the process by cutting each half into 1cm/½in strips.

Place onto the lined baking sheet and sprinkle your cheese, pumpkin seeds, sunflower seeds and linseeds.

Bake for 10-15 minutes, until crisp and golden, then leave to cool on the tray.
