Godminster Cheddar, Spinach and Garlic Quiche

Perfect for brunch or a light supper, this quiche recipe is one that the whole family can enjoy! You can also add extra vegetables, bacon, or perhaps another of your favourite Godminster cheeses if you want to make it extra cheesy.

  • 100g butter
  • 3 cloves garlic (chopped)
  • 1 small onion (chopped)
  • 270g spinach (drained)
  • 200g Godminster Vintage Organic Cheddar (grated)
  • Shortcrust pastry block
  • 4 eggs (beaten)
  • 250ml milk
  • Salt and pepper to taste
  • Preheat the oven to 190C/170C Fan/Gas 5. Line a pie dish with shortcrust pastry, trimming any excess
  • In a frying pan, melt butter over medium heat. Saute the garlic and onion in the melted butter until lightly browned
  • Stir in spinach and add half of the grated Godminster Cheddar 
  • Season with salt and pepper. Pour the mixture into the pie dish
  • In a bowl, whisk the eggs and milk. Season with salt and pepper
  • Pour into the pie dish and mix with the spinach mixture
  • Bake for 15 minutes then remove from the oven and sprinkle the remaining cheddar
  • Place back in the oven and bake for 35-40 minutes or until golden brown
