
A deliciously cheesy side that’s sure to leave your guests impressed this Christmas.
Ingredients
- 500g spinach (washed and chopped)
- 25g butter
- 1tbsp plain flour
- 200ml milk
- 150ml double cream
- 50g Godminster Vintage Organic Cheddar (grated)
- 50g gruyère (grated)
- 50g parmesan (grated)
Method
- Place the spinach in a colander and pour one kettleful of boiling water onto the spinach to wilt
- Leave to cool and then drain out as much excess water as possible
- Melt the butter in a pan
- Add flour and continue to stir until you make a roux
- Gradually pour the milk into the pan and continue to stir to make a white sauce
- Leave to simmer for 5 minutes
- Stir the cream into your white sauce mixture and season
- Add the Godminster Vintage Organic Cheddar and gruyère and stir until melted
- Stir in the spinach and cook for a few minutes
- Pour mixture into a shallow dish and sprinkle parmesan on top
- Place under a grill until golden and bubbling
