Godminster & Gruyere Creamed Spinach

A deliciously cheesy side that’s sure to leave your guests impressed this Christmas.

  • 500g spinach (washed and chopped)
  • 25g butter
  • 1tbsp plain flour
  • 200ml milk
  • 150ml double cream
  • 50g Godminster Vintage Organic Cheddar (grated)
  • 50g gruyère (grated)
  • 50g parmesan (grated)
  1. Place the spinach in a colander and pour one kettleful of boiling water onto the spinach to wilt
  2. Leave to cool and then drain out as much excess water as possible
  3. Melt the butter in a pan
  4. Add flour and continue to stir until you make a roux
  5. Gradually pour the milk into the pan and continue to stir to make a white sauce
  6. Leave to simmer for 5 minutes
  7. Stir the cream into your white sauce mixture and season
  8. Add the Godminster Vintage Organic Cheddar and gruyère and stir until melted 
  9. Stir in the spinach and cook for a few minutes 
  10. Pour mixture into a shallow dish and sprinkle parmesan on top
  11. Place under a grill until golden and bubbling
