Ghoulish Godminster Halloween Peppers

200g Godminster Vintage Organic Cheddar, grated

4 orange sweet/bell peppers

1 onion, finely chopped

2 garlic cloves, grated or finely chopped

2 tsp chili powder

250g lean minced beef

150g white rice (cooked)

¼ pint chicken stock

Splash extra-virgin olive oil

400g chopped tomatoes

Salt and pepper to season

1.    Preheat oven to 180°

2.    Cut off the top of each pepper and put to one side. Scoop out the insides and seeds and discard. Using a sharp paring knife, carve a face into each pepper

3.    Drizzle a little olive oil into each pepper and season, before replacing the ‘lids’ and placing the peppers onto a baking tray

4.    Heat a tablespoon of oil in a non-stick griddle pan and sauté onions for 5 minutes, until soft. Add the garlic and mince and sauté until browned and cooked through.  Remove from the heat and drain the fat

5.    Return the griddle to the hob and add the chili powder, chopped tomatoes, stock, rice and 3/4 of the Godminster Vintage Organic Cheddar and stir well

6.    Fill the peppers with the mixture and sprinkle the remaining cheddar over the top before replacing the ‘lids’ hollowed out peppers

7.    Cover the peppers with foil and bake for 30 minutes before removing the foil baking for a further 10minutes uncovered.  Remove from the oven and serve immediately
