Cheesy Godminster Vintage Organic Cheddar Loaf

A simple and easy to follow recipe that’s perfect home baking. Ideal with a leafy salad or a hearty soup.

  • Place the flour, cheddar, and butter to a mixing bowl and add the yeast and the salt to opposing sides of the bowl. (The salt will destroy the yeast otherwise!) Combine all ingredients with a spoon
  • Mix the ingredients together with your fingers, adding a little bit of water at a time until the dough is well combined. Ensure that you get all of the flour in the bowl into the mixture
  • Lightly grease a clean work surface using a small amount of oil (this helps to maintain the texture of the dough rather than using flour). Turn out your dough onto the surface
  • Fold one edge of the dough back into the middle. Rotate by 45 degrees and repeat. Do this until the dough is lightly covered in the oil
  • Knead the dough for about 4-5 minutes. If the dough gets sticky, flour your hands
  • Lightly oil your (clean) mixing bowl and place the dough inside. Cover with a damp tea towel and leave to prove for about an hour or until doubled in size
  • Line a baking tray with baking paper
  • Once the dough has finished proving (it should bounce back when touched), turn it out onto a floured surface. Knock it back by kneading the dough once again and repeat several times. Once finished kneading, shape into a round loaf
  • Place the dough onto your baking tray and again, cover and leave for around an hour or until doubled in size
  • Preheat your oven to 220C/200C Fan/ Gas 7
  • Once the dough has finished proving, sprinkle some flour onto and rub into the dough. Shallowly groove the bread on top to create a diamond pattern. You can also sprinkle some mixed herbs on top if you like!
  • Put the loaf in the oven and bake for 30 minutes or until the loaf is golden. Tap underneath to see if properly baked (it should sound hollow). Leave to cool
