Cheesy Broccoli Soup

A true winter warmer!

  • 150g Godminster Vintage Organic Cheddar, grated
  • 450g broccoli, roughly cut
  • 2 carrots, peeled and roughly chopped
  • 4 spring onions, finely sliced
  • 2 garlic cloves, roughly chopped
  • 25g butter
  • 240ml milk
  • 475ml water
  • 200ml crème fraiche
  • Salt and pepper to season
  1. Bring the broccoli to the boil in a pan and simmer for approximately 5 minutes
  2. Melt the butter in a second pan and fry the garlic for a minute
  3. Add the spring onions to the butter and cook for a few minutes until they soften
  4. Drain the broccoli and add to the butter pan
  5. Add the carrots and season
  6. Cook on a high heat for 5 minutes stirring regularly to help the vegetables absorb some of the butter
  7. Add the water and milk, bring to boil simmer for 20 minutes or until the vegetables are cooked
  8. Stir in the grated Godminster until it has melted
  9. Serve immediately, with crusty bread
