Learning how to open your waxed cheese is a rite of passage. A secret that is passed down the generations, from cheese-head to curd-nerd. Come closer and we’ll show you the arcane ritual…
How to open a Waxed Cheese

At Godminster we simply say: chop off the top and tuck in.
- Place your waxed cheese – also known as a truckle – on its side
- Taking a sharp knife, line it up a few millimeters from the top end (now the side) of the truckle and carefully cut down
- Once you have cut around the top rim of your truckle, remove it from the cheese like a lid
- Enjoy the delicious cheese inside
- Replace the lid of the truckle and gently press closed around the edges
Tips and tricks:
- If your knife isn’t sharp then some wax may appear on the cheese after cutting it; this can be carefully scraped off the cheddar
- Take your truckle out of the refrigerator an hour before enjoying it to allow the cheese to come up to room temperature
- Preserve your waxed cheese by tightly wrapping it in baking parchment and keeping it in the refrigerator in between meals
How to open a Waxed Cheese Star
‘Chop off the top and tuck in’ also applies to our waxed cheese stars! We recommend the following:
- Put the waxed star on its side
- Line up your knife a few millimetres from the ‘top’ of the cheese (now the side of the cheese)
- Carefully cut down, applying even pressure, to cut the layer of wax away
Tips and tricks:
- Making a holiday cheeseboard? Keep your truckle on its side and keep chopping downwards to create easy star cut-outs that look great on a grazing board
- As with our other waxed cheeses, we recommend taking your Godminster cheddar out of the refrigerator an hour before serving
How to open a waxed Cheese Heart
As with our round and star-shaped waxed cheeses, you can also open your waxed cheddar heart in the same way: chop off the top and tuck in.
- Put the waxed heart-shaped cheese on its side; the side is curved, so hold it carefully in place with one hand to steady it
- Taking a sharp knife, carefully line it up a few millimeters from the top (now the side) of the cheddar cheese
- Cut down carefully to remove the ‘lid’ of the heart
- Enjoy the delicious cheddar inside!
Tips and tricks:
- Heart-shaped cheddar cheeses are perfect for a Valentine’s cheese board. Repeat steps 2 and 3 above to create pretty heart slices of cheese for a romantic snack!
