In part, being self sufficient means not having to buy in so many goods (or services) from outside.
Not only is it cheaper, but traceability becomes less of an issue. For part of the year our cows feed on our purest pastures. At other times, we provide for them by growing wheat, oats, field beans and by making our own silage.
We also plant various nutritional herbs which provide an extra source of vitamins and minerals. Currently, we only buy in organic molasses and a protein, which enriches the quality of the milk.
This makes the quality of our cheeses incomparable.
