Eat shoots and leaves

As it’s National Vegetarian Week and we are finally seeing some glorious sunshine, we thought we would bring you a vegetarian recipe that is quick and easy to whip up on a hot summer’s evening. And… we have lots of bags of Steve’s Leaves delicious baby leaves to give away to help you make it!

Our friends at Steve’s Leaves are a bunch of farmers who grow baby salad leaves outside in the fresh air.  Just like us, they like to build habitats to encourage all kinds of wonderful wildlife on their farm and just like us, what they produce is delicious! Apple and Cheddar Salad with Walnuts

  • 60ml apple juice
  • 30ml cider vinegar
  • 1 teaspoon honey
  • Pinch salt and pepper
  • 1 bag Steve’s Leaves
  • 2 to 3 medium Pink Lady apples, cored and thinly sliced
  • A handful of walnuts toasted
  • 85g shaved Godminster Cheddar

In a large serving bowl, whisk together cider vinegar, honey, salt, and black pepper. Add Steve’s Leaves and apple slices to the bowl and toss gently to coat. Arrange salad on 6 plates and top with walnuts and Godminster cheese – simple and delicious. Jess
